New Co-Working Space, Palette Cafe, Also Offers Coffee, Baked Goods And Other Snacks

Catherine Hover, owner of Saratoga Paint & Sip, has opened a new cafe and shared workspace in the heart of downtown Saratoga Springs.
The Palette Cafe, at 493 Broadway, features co-working space. It serves kru coffee, alcohol beverages, snacks, desserts, meat and cheese plates and the New Orleans specialty doberge cake. The cafe carries specialty doughnuts by Darling Doughnuts.
Hover partnered with local merchants for food items.
“I can show people a good time, but I can’t cook, or roast coffee, or make doughnuts. We’re bringing in the experts for those things—people who will be on point,” said Hover.
Future plans are to expand into the next floor up. More shared and semi-private co-working space, meeting space and a community room will be available.
A private back patio will be available for what Hover calls “a secret garden feel.” She hopes to begin expansion in the fall. Annual and monthly membership will be available.
“The emergence of remote workers is huge right now,” said Hover. “I wanted to create a space that is welcoming, high-end and comforting. Remote workers need a creative, happy space—somewhere they’re excited to be in. It will also be a great venue for smaller, intimate parties.”
Hover owne Paint & Sip studios in Latham and Burlington, Vt. She sold the Burlington one and closed the Latham location. “Instead of adding studios, I decided to double-down on the magic in Saratoga,” said Hover.
Palette Cafe will feature an artist-in-residence program.
“Artists often get the short end of the stick,” said Hover. “They’ll have their work hanging on the walls of galleries and coffee shops, actively trying to sell it. The galleries and coffee shops just need something on their walls, and may not market the artist or the work. The work will sell, but it’s usually to people the artist sent there to buy it. The artist will get a 50 percent commission on their work, that they sold to people they sent to the venue.”
Palette Cafe will contract with artists at a 70 percent commission.
The Palette Cafe is open daily, 8 a.m. to 8 p.m. The venue is active on Facebook and Instagram.
