I have to start off by saying that while I was uploading the pictures
\n for this blog onto my computer, my mouth literally started watering.
\nIt actually prompted me to get up and open my doggie bag simply because I
\n HAD to taste it again. <\/p>\n
Three Olives is a new restaurant in Ballston Spa, with a hearty menu
\nfull of Italian dishes. Of course, knowing my background, I was
\ndefinitely excited to try the areas newest Italian joint. The
\natmosphere is pleasant, and the staff was engaging and enthusiastic.
\nThe owner even came out to talk to us and make us feel welcome.<\/p>\n
After a short deliberation, I chose to go with the eggplant
\nparmesan. Eggplant parm is by far my favorite dish, especially because
\nmy Grandma’s famous recipe is to die for and can not be touched. I’ve
\nsearched long and far to find a restaurant version that could stand up
\nagainst mine, and tonight is the night I think I may have found my
\nmatch.<\/p>\n
Dinner started off with a delicious family style salad with homemade dressing:<\/p>\n

Cheesy garlic bread:<\/p>\n
<\/p>\n
Fried Calamari, lightly breaded FRESH squid with panko breadcrumbs:<\/p>\n
<\/p>\n
Penne Alla Vodka, another favorite of mine. This had a stronger
\ngarlic taste than I’m used to, and I LOVED it. Definitely recommended.<\/p>\n
<\/p>\n
Sausage and peppers on top of a heaping helping of linguine:<\/p>\n
<\/p>\n
AND last but not least, my eggplant parmesan:<\/p>\n
<\/p>\n

I thought it would be helpful to take a picture after eating some so
\nyou can see the thickness of the eggplant. The eggplant\/sauce\/cheese
\nratio was perfect, and left me oh so satisfied. It also came along with
\n a hefty portion of pasta with marinara sauce which in my case needed to
\n be wrapped up and taken home!<\/p>\n
When it comes to Italian food, I’m a tough critic, but this meal was
\nincredible, and I think Three Olives is going to do extremely well in
