This is a great accompaniment for the Chix-Peas and Ginger Sauce recipe.
Easy, Excellent, long shelf life, flexible ingredients and very versatile. This is a healthy option to curb your sweet tooth, and can be prepared during any season.
4-5 apples (any fruit)
2-3 beets
1 c apple cider vinegar
1 c. honey
½ orange juice
1 t cloves
3-4 dried chilies – Break up and then 30 second grind.
Cinnamon stick – hit/break up with a meat tenderizer or ice cream scoop.
1 T ginger/garlic
Notes: may adjust quantities, keep honey and vinegar amounts equal. For example, if you cut honey to ½ cup, do the same for vinegar. May substitute the fruit and beets for tomatoes.
PREPRATION
1- Cook beets until soft.
2- Cut apples.
3- Grind cloves, cinnamon, and chilies in spice grinder.
4- Mix all ingredients together.
5- Cook until mixture is reduced to a jam like thickness. Cook time may be approx. 45 min to 1 hour.
Use your favorite fruits-seasonal is best!
For Holidays, add nuts and raisins, &/or cranberries!
