I had heard that cucumbers are “mostly water” and have very little nutritional value from my mom, so when I had the chance I always opted for the more healthy option: carrots and even felt guilty for my love of cucumbers.
However, as I’ve become a juicing enthusiast I have learned that nothing can be farther from the truth.
Cucumbers are GREAT for reducing your risk of breast, ovarian, prostate and uterine cancers! Why? They contain three lignans (chemical compounds found in plants) called lariciresinol, pinoresinol, and secoisolariciresinol that reduce your cancer risk.
Also, cucumbers create an alkaline state in your body and cancer has a hard time thriving in an alkaline state. The skins are full of Vitamin A.
Since I learned this I’ve started adding to my juicing routine and it makes the juice much better and less thick. Remember cucumbers are part of the “dirty dozen” – so this is one veggie worth buying organic. Especially if you are juicing with the skins on as you should be.
