Chicken broth is incredibly healthy and is a must as a staple for your kitchen, every time we have a chicken roaster, I make chicken stock and freeze it for use in soups, for making quinoa or rice or as a base for my favorite healthy recipe Alton Brown’s Curried Chicken Pot Pie.
To make this staple, first make sure you have a free range organic chicken – do not make broth from a store bought chicken. Then take remains of a roasted chicken, break all bones, fill with 8 cups water
and 1 TBS vinegar, carrots, celery (use the leafy parts) and onion. Simmer for hours or put in your stock pot overnight with even more water. If you can get the chicken feet and necks, even better!
Chicken broth is full of calcium, magnesium, phosphorus, gelatin collagan, glycine, it is a natural immune booster and does countless other things for you. Just read this, the list is so long for what chicken broth does, it’s ridiculous! In short it’s a miracle food that you must include in your diet every week!
After you make it put it in the fridge, remove the layer of fat and the broth below should be gelatinous, Heat it back up and you have snacks!
My kids love fresh broth with just sea salt, it makes a great healthy snack!
